Started by a homecook navigating life with chronic illness.

Hi there, I’m Shannon.

A woman with short dark hair, wearing a green top and yellow headband, smiling and holding a fabric sign that reads "The Delicate Squash" in front of a leafy green hedge.

My story

I’ve always been someone who’s found solace in good food—whether it was baking with friends, experimenting with seasonal produce, or swapping stories over bowls of squash chili. The through-line is connection. So when I began to develop chronic illness symptoms at the end of 2019, it’s no surprise that I turned to diet to both nourish and ground me during a very difficult time.

Why Delicate Squash

The Delicate Squash was born out of my desire to connect over nourishing food and provide gentler baked good options to my community. As I learn to navigate life with chronic illnesses, I often turn to diet and cooking nourishing meals to help manage symptoms and ground me. When I began my healing journey with food, I found it difficult to find GF, DF, and refined sugar-free options (let alone altogether). So I set out to offer baked goods that honored my values surrounding food, putting out products that I would hope to find in my neighborhood markets. Now here I am several years later offering GF + DF granola and pastry box subscriptions, doing pop-ups in collaboration with local businesses, teaching seasonal cooking workshops, and offering my products in spaces that value supporting local.

What’s next

Right now, The Delicate Squash shows up weekly in pop-ups and through online ordering, offering rotating seasonal pastry boxes and granola. But the vision is bigger: a brick-and-mortar space that’s a home base and a hub—where you can grab a treat and gather with others. A space where you’ll be able to attend workshops, open mics, view art, and feel belonging in real time. Whether you’ve found me online or at one of my many a pop-ups around town—you matter! If you ever have a special request or just want to say hi, don’t hesitate to send a message. I deeply believe in honoring each person’s story, especially those who have special dietary needs, chronic conditions, or are just yearning for something gentle yet joyful. Welcome to the table. Thank you for being here.
